Minister of Agriculture and Food Dr. Miroslav Naydenov will order the directors of six state forestry enterprises to invest in the building of facilities for cooling, storage and primary processing of game meat. This became clear during the organized roundtable entitled "Game valuable resource for traditional Bulgarian cuisine."

Thus, restaurants and retailers will be able to legally buy meat of wild animals without limits. At the moment all people, managing the game in Bulgaria are allowed to sell game meat only fresh or chilled, and in limited quantities. Only state hunting farms „Cherni Lom", "Sherba" and "Vitoshko-Studena" can realize unlimited quantities of frozen carcass meat. State hunting farm "Rositsa" and the station of Botevgrad can sell cut and packaged meat on all international and European standards.

Population of game is increased and revenue from hunting tourism increased by 30% last year. This is a great resource and we can not let it expire, said Minister Naydenov.

In our country there is not sufficient conditions for game meat harvesting. Only two licensed slaughterhouses for wildlife exist. It is necessary the conditions for the lawful movement of game meat in the commercial network in the country to be created. Frozen game meat imported from the European Union is the only kind sold in our country, said Dr. Lubomir Kulinski, Deputy Executive Director of the Bulgarian Food Safety Agency.

Much of the meat of wild animals shot by foreigners during the hunt goes to rendering plants, while this meat could be realized.

The roundtable was held at the initiative of Minister Naydenov and was organized by Euro-Toques Bulgaria. Representatives of Euro-Toques Bulgaria urged his colleagues to use only verified legal game meat and avoid the gray sector.
